Sous Chef

A Chef de Cuisine is second in command, below the Executive Chef. The main responsibility is maintaining the daily and weekly operations for the kitchen and its multiple menus, in close coordination with the Executive Chef and their vision. The CDC assumes responsibilities of the Executive Chef if they are unavailable. Excellent communication is necessary to be an intermediary between the kitchen and management. Strong leadership and a positive mindset are needed to maintain a good kitchen culture.

Essential Functions & Responsibilities

  1. Be always professional and courteous
  2. Sustain a smooth-running kitchen on a day-to-day basis
  3. Understand and nurture the F&B program’s concepts and culture
  4. Take the lead on training, guiding, managing, and scheduling personnel
  5. Maintain and coach high expectations for cleanliness, organization, food storage, and sanitation standards
  6. Track product yield and recipe adherence for quality control and ordering purposes
  7. Ensure an adequate stock of food, dry goods, and equipment in conjunction with the Purchasing Manager
  8. Hold an awareness of documentation needed and retained in employee files
  9. Be familiar with all safety and emergency procedures including OSHA requirements
  10. Ensure health and safety standards meet safe food preparation practices and areas
  11. Attend relevant meetings

Reporting Relationships

  • Reports directly to: Executive Chef.
  • Also works for: Director of F&B
  • Directly supervises: Back of House Staff
  • Indirectly supervises: N/A

Knowledge, Requirements and Skills

  1. Experience in high volume dining preferred
  2. At least five (3) years’ experience in the hospitality industry
  3. Ability to use MS Office and F&B software systems (i.e. POS and F&B procurement system)
  4. Must be aware of management functions and can communicate with all levels of personnel and customers
  5. Excellent reading, writing and oral proficiency in the English Language
  6. Good time management skills, attention to detail
  7. Ability to multitask and stay organized
  8. Work well under pressure, requires being a team player

Kitchen Helper

Entry-level position, but strong candidates should hold certain skills and qualifications:

Kitchen Helpers primarily help with a variety of tasks, depending on what the Cooks or Waitstaff need at the time. Some of main duties and responsibilities include:

  • Mopping and sweeping the kitchen
  • Taking out the garbage and replacing garbage bags
  • Washing, drying, and putting away all dishes and kitchen utensils
  • Unloading food supplies from delivery trucks
  • Helping cooks prepare for meals by washing, cutting, peeling, and slicing ingredients
